Four Layer Pumpkin Cake

This year for Thanksgiving as an alternative to the traditional pumpkin pie, I decided to go for a "lighter" ( lighter is really a relative term, there is still plenty of bad stuff in this folks) dessert for the awesome turkey dinner that my mom made.

A thin slice of this pumpkin cake hit the spot after dinner...Here's the recipe. Now, I chose to leave off the carmel and pecans as it just makes this way to heavy. My boss made this cake a few weeks ago and brought it to work, she said the same thing, but you know what you would like.

Going for something festive to decorate the cake...these are orange slices, cranberries, and orange leaves. We have this amazing market here called Paul's Fruit Market, and I found the oranges with the leaves still on them...way too pretty not to use!


Pippa and Phoebe did really well on the journey north. They even sat next to each other!
